The historic Edgecombe Brothers property is growing some of WA’s best asparagus.
- We are spoilt for choice in WA, with asparagus being grown in the Gascoyne region, the Great Southern and even the Kimberly.
- The Edgecombe Brothers knew they had to do something different to stand out amongst the wineries and eateries of the Swan Valley. They settled on asparagus, as it grows well here, suiting the red soils.
- Asparagus can be grown in your own garden – you need full sun, and can grow it in a raised garden. Even if you struggle to grow spears, it is a great looking plant.
- Asparagus is delicious raw, although it has to be bought fresh for this.
- When boiling asparagus, look for the change in colour – when it brightens, you can transfer it to a pan.
- Asparagus shines when cooked quickly and eaten straight away with splashes of extra virgin olive oil, black pepper and parmesan.
- If you have slightly woodier spears, you can make a refreshing spring soup, or shave it into curls for salads.
