Black rice makes an incredibly tasty, healthy and nutritious addition to any dish.

  • Black rice contains less calories and carbohydrates than other types of rice. It is also higher in protein

  • Black rice is rich in fibre, which keeps you fuller for longer and assists with maintaining a healthy body weight.
  • It has a delicious nutty flavour, and Julie’s beef burrito bowl is the perfect way to incorporate it into your diet.

Beef Burrito Bowl with Black Rice



Ingredients
Mince mixture
500g Dirty Clean Food beef mince
1 tbsp olive oil
½ medium red onion, finely diced
1 garlic clove, crushed
2 tsp Moroccan spice
1 tsp ground cumin
1 tsp sweet paprika
1 400g can black beans, drained
1 cup black rice

For the salad:
1 carrot, grated
4 leaves cos lettuce, shredded
2 tomatoes, chopped
1 corn cob, steamed or microwaved

For the topping:
4 tbsp thick natural yoghurt
1 avocado sliced


Instructions
Cook black rice as per instructions in a rice cooker or saucepan. While the rice is cooking, add the oil and onion to a large frying pan, sauteing until golden. Add the mince and garlic, breaking up with a wooden spoon and stir-frying until browned. Add all the spices and stir-fry until aromatic. Add the black beans and simmer with a little water for 10 minutes. To assemble the burrito bowl, place one quarter of the mince mixture and the black rice across four bowls. Arrange the salad vegetables next to the rice and beef mice and top with the sliced avocado and yoghurt.
