Ingredients
1 kg broccoli, cut into florets
1 kg cauliflower, cut into florets
100 g butter
½ cup plain flour
3 cups milk
1 ½ cups parmesan, coarsely grated
2 slices grain bread, crusts removed
100 g blue cheese, crumbled
3 tbsp olive oil
Freshly ground black pepper
Instructions
Preheat the oven to 200 degrees Celsius. Blanch the broccoli and cauliflower in salted boiling water for 1 minute and then drain well. Transfer to an oven-proof dish and set aside. Melt butter in saucepan then add flour and cook, stirring for 1 minute. Gradually whisk in milk, stirring constantly over medium heat for about 5 minutes or until mixture boils and thickens. Remove from heat and stir in the parmesan. Spoon mixture over broccoli and cauliflower. Cut bread into small chunky pieces and place in a bowl with blue cheese and olive oil. Mix well. Sprinkle bread mixture evenly over vegetables. Bake for about 10 minutes or until golden. Season well with pepper and serve immediately.
