Eating an apple a day keeps the doctor away’ is an age-old phrase that rings true even more so today. Julie shares her simple and delicious way to add more apples, and some wholesome sweetness, to into your diet.

  • Research at the RPH Research Foundation, has shown that eating apples regularly, improves blood vessel function and reduces the risk of death from all causes.
  • Eating the whole apple is an ideal way to take advantage of the entire package, as apples are a rich source of fibre, vitamins and minerals.

  • A delicious way to incorporate your favourite apple into your diet is to make Apple Crumble, traditionally a little decadent, this version is lower in fat and sugar and full of fibre.

Apple Crumble Recipe


Ingredients
10 apples, cored and chopped into small chunks
½ cup each of oats, wholemeal flour and Freedom Foods Barley Clusters
¼ cup each of desiccated coconut, butter and white sugar


Method
Place the apple chunks and ½ cup water into a medium saucepan and simmer on low for 10 minutes. Spoon the apple chunks with any remaining liquid into the base of a greased casserole dish. In a medium-sized bowl, rub the flour and butter together using your fingers, until the mixture resembles breadcrumbs. Stir in the remaining dry ingredients. Spoon the mixture evenly over the apple and bake in a moderate oven until golden brown on top. Delicious served warm with custard or yoghurt.
