Stuart's Lamb dish

Ingredients


1 lamb loin, flap on
1 brown onion
100gm butter
4 dried figs
4 dried dates
¼ cup pistachios
2 bunch mint
1 bunch Italian parsley

½ continental cucumber
1 red onion
1 pita bread
3 tomatoes
100ml white vinegar
1 lemon
2 cup Greek yoghurt
2tbsp Tahini
1 lemon


Method

  • Trim the lamb
  • Sweat the onions off in butter
  • Chop herbs, nuts and fruit and mix with onion and butter
  • Stuff lamb and tie up
  • Preheat oven to 100 degrees
  • Cook lamb until internal temp of 45 degrees
  • Turn heat up to 200 until internal temp of 55 degrees
  • Rest for 10 minutes
  • Dice and toast pita
  • Dice veg for fatouche
  • Mix and dress with vinegar and add herbs
  • Mix yoghurt with tahini and lemon
  • Serve
