  • The Western Rock Lobster fishery was the world’s first fishery to be certified as ecologically sustainable by the Marine Stewardship Council (MSC) in 2000. Since then, the fishery has been successfully recertified four times.
  • The Back of Boat Lobsters program is making more local lobster available to West Australians, sold directly from the fishers to the community.
  • Western rock lobster is a premium, wild-caught product from some of the most pristine waters in the world.

RECIPE: Lobster Tacos

  • 2 live Crayfish- roughly 500gm each
  • 2 heads fennel
  • 2 golden shallots
  • 200gm creme fraiche
  • 2 lemons
  • 2 limes
  • 1 small jar cornichons
  • 1 small jar of aioli or mayonnaise
  • 1 bunch parsley
  • 1 bunch coriander
  • 250gm butter
  • 1 packet of good quality corn tortillas
  • 1 small jar of chipotle in adobo
  • 1 head of organic garlic
