Mt Barker Roasted Carved Chicken


Chicken and Brie Omelette Ingredients

4 large eggs
1 small wheel of brie, sliced
20gm butter
2 bunch chives
1 Roma tomato, diced
2 tablespoons of finely sliced coriander
1/4 of a small red onion, diced
30ml olive oil
30ml sherry vinegar


Method

  1. Place butter in a pan and allow to melt and coat the pan
  2. In a bowl, whisk 4 large eggs in a bowl and add to the pan
  3. Add chicken, chives, and sliced brie cheese
  4. Turn the temperature down to medium heat and allow to cook for 2-3 minutes
  5. Fold the omelette in half and allow to sit until the brie melts
  6. For the salsa add diced tomato, diced red onion, finely sliced coriander, olive oil and sherry vinegar to a bowl and mix
  7. Place the omelette on a plate and top with the salsa and serve


Vietnamese Chicken Salad Ingredients

250gm of Mt Barker Free Range Roasted Carved Chicken
2 spring onions, finely sliced
1 small handful of mint
1 small handful of coriander
1 small handful of Thai basil
1-2 finely sliced birds eye chilli
100gm of fresh bean sprouts
1 small red capsicum, julienned
100gm roughly chopped snow peas
Half a continental cucumber, julienned
2 Roma tomatoes, deseeded and sliced
1 packed vermicelli rice noodle
20ml fish sauce
20gm finely grated palm sugar
50ml fresh lime juice


Method
  1. Add vermicelli rice noodles to a pot of boiling water and allow to cook
  2. Drain the noodles, rinse with cold water and allow to drain
  3. Place the noodles in a bowl along with fresh bean sprouts, spring onions, coriander, Thai basil, julienned red capsicum, julienned cucumber, chopped snow peas, mint, seeded and sliced tomatoes, chilli, and roasted chicken.
  4. For the dressing add grated palm sugar, lime juice and fish sauce to a bowl and whisk until the palm sugar has been dissolved
  5. Pour the dressing over the salad, toss, and serve
