Georgia and Melissa share a tasty recipe for Grilled Cauliflower Cheese Steak served with a mouth-watering Bacon Jam.

Recipe – Grilled Cauliflower Cheese Steak & Bacon Jam


Ingredients:


Grilled Cauliflower cheese steak
1 whole cauliflower
1 clove of garlic chopped
50ml thickened cream
100gms grated mixed cheese
White pepper & salt
1 tsp mustard powder
Aged cheddar


Bacon Jam
180gms Australian Bacon Brunoise
180gms Brunoise Onion
3 Cloves Grated Garlic
2 Shots of Coffee
250ml Brown Malt Vinegar
1 Tbsp Tabasco
1 tbsp Green Tabasco
3/4 Cup Firm Packed Brown Sugar


Method

  1. Add two tablespoons of olive oil to a pan and add equal parts of onion and bacon and sauté.
  2. Add vinegar and coffee to the mix and allow to simmer.
  3. After allowing to simmer for 5-10 minutes add sugar and tabasco sauce to the jam. Allow jam to simmer for an additional 30 minutes to thicken.
  4. Prepare the cauliflower and cut into steaks. Drizzle with olive oil and salt and pepper and place on the grill. Flip the steak once golden brown.
  5. To prepare the Cauliflower sauce add garlic, mustard powder, cheese, and cream to a blender and combine.
  6. Spread the sauce over the cauliflower steaks and place in the oven for 10 minutes
  7. Take the cauliflower steaks out of the oven and spoon the bacon jam over the top and finish with a sprinkle of finely grated aged cheddar
