Ingredients:


For the Chicken Mince
80ml canola oil
20ml sesame oil
400gm chicken mince
3 teaspoons hoisin sauce
3 teaspoons shaoxing wine
2 teaspoon dark soy sauce
1 teaspoon five spice powder


For the sauce
3 tablespoons tahini
4 tablespoons soy sauce
3 teaspoons sugar
1/2 teaspoon five spice powder
1 teaspoon Sichuan peppercorn powder
1/2 cup chili oil (I will get)
3 cloves garlic
1/2 cup hot cooking water from the noodles


For the noodles
500gm fresh or dried white noodles
1 bunch leafy greens (spinach, bok choy, or choy sum)
chopped peanuts
chopped scallion
Bean sprouts
Fried shallots


Method:

  1. Add oil to a hot wok and sit until it begins to smoke. Add chicken mince to the wok and add Chinese five spice powder, Szechuan powder, green onions, cooking wine, hoisin sauce, dark soy sauce and mix well.
  2. To make the sauce combine all ingredients and mix well.
  3. Add your noodles to the wok and add your leafy greens.
  4. To plate up add your noodles to a bowl and garnish with fresh beans sprouts, spring onions, fried shallots and peanuts
