Pork and Prawn Wonton Soup

As Bumplings approaches its fourth birthday this July, Brendan is joined by his Grandmere to go back to his beginnings, cooking up a family fav, Wonton Soup.


RECIPE

Pork and Prawn Wonton Soup


Ingredients


Wontons and garnish

  • 24 wonton wrappers
  • Spring onion, sliced, to serve.


Wonton broth

  • 1kg chicken carcass
  • 5 slices ginger
  • 3 stalks spring onion
  • Salt, to taste


Pork and prawn filling

  • 200g pork mince
  • 200g raw prawn meat, chopped.
  • 1 tbsp oyster sauce
  • 1 tsp light soy sauce
  • ¼ tsp sesame oil
  • Pink of white pepper


Garlic and soy sauce

  • 60ml vegetable oil
  • 4 medium cloves of garlic minced finely.
  • 125 ml soy sauce
  • 1 tsp chilli flakes
  • 5ml sesame oil


Method


For the Wonton broth

  1. Bring a pot of water (approx. 1.5L) to the boil.
  2. Add in the chicken carcass, ginger and spring onion, and bring back to a boil.
  3. Reduce heat and skim any impurities that arise to the surface and leave to simmer for 1 hour.
  4. Scoop out all ingredients from the broth, taste and season with salt.
  5. Add bok choy or Asian greens if using.


For the pork and prawn filling

  1. Place all ingredients into a medium bowl and mix vigorously in one direction until the mixture binds.
  2. Cover and leave to rest in the fridge for 30 minutes.

For the fried garlic and Soy Sauce

  1. Heat vegetable oil in a small pan over medium-low heat.
  2. Add in minced garlic and cook for about 5 minutes or until fragrant and golden.
  3. Stir if required to avoid edges from browning too much.
  4. Remove from heat and transfer to a small bowl.
  5. Mix in the remaining ingredients.


Assembling:

  1. Place 1 wonton wrapper on a clean surface.
  2. Place a teaspoon of filling in the centre.
  3. Brush half of the edges of the square with water.
  4. Fold the wet edges over (in half) to make a rectangular shape and enclose the filling.
  5. Brush one of the corners with water and fold inward to overlap with the other corner. Press to seal.
  6. Repeat using the remaining wrappers and pork and prawn mixture.
  7. Set aside covered with a damp tea towel if required.
  8. Cook wontons in boiling water until cooked through, about 4-6 minutes.
  9. Remove from water using a slotted spoon and divide among serving bowls.
  10. Divide the Asian greens and ladle chicken broth over.
  11. Top with spring onion, fried garlic and soy sauce.
