Basque Cheesecake with PX cream and wood roasted pears

Stuart shows us one of few desserts he cooks over the fire of his restaurant, the Brown Street Grill. Surprisingly, it’s one that you’re meant to burn.



RECIPE

Basque Cheesecake with PX cream and wood roasted pears


Ingredients


Basque Cheesecake

  • 1kg Cream cheese
  • 8 each eggs
  • 400gm castor sugar
  • Zest of 1 orange
  • 100ml cream
  • 50ml Pedro ximanez


Roasted Pears 

  • 4 each bosch pears
  • 1 cup brown sugar
  • 100gm unsalted butter
  • A pinch of lemon thyme


Method


Basque Cheesecake

  1. Beat cream cheese and sugar until soft
  2. Beat in eggs one at a time
  3. Whisk in cream, PX and orange zest
  4. Line a cast orion pan or spring form pan
  5. Preheat oven to 220 deg
  6. Bake for 15 minutes
  7. Increase temp to 240
  8. Bake for a further 9 minutes
  9. Remove and allow to cool for 5 hours


Roasted Pears

  1. Cut and de-core pears
  2. Cover in brown sugar, add butter and bake until golden brown
  3. Turn over and continue cooking till soft
  4. Bast with caramel

To Serve

  1. Serve with whipped mascapone
