Cassandra takes an evening with living legend Jerry Fraser, who shows her a trick or two about shucking fresh oysters.
- Jerry Fraser is the King of Oysters - so much so that eating them any way other than a la naturel is almost an affront to him. Apart from the occasional sauce mignonette, he is a staunch purist when it comes to oysters.
- Fresh oysters should require anything more than a shucking knife, a small, letter-opener-style knife that is thick enough to twist and leverage the oyster shell.
- Pairing your oysters with a bubbling wine like Howard Park’s Petit Jeté or a nice white riesling is your best bet to act as a foil against the salty brininess of an oyster.
