Bun Bo Xao: Vietnamese lemongrass beef noodle salad



Ingredients

  • Topside beef (sliced)
  • Lemongrass (finely chopped)
  • Garlic (whole and smash)
  • Onion (sliced)
  • Soy sauce
  • Fish sauce
  • Brown sugar
  • Vermicelli noodles
  • Lettuce (sliced)
  • Spring onion (sliced)
  • Pickled carrot
  • Vietnamese herbs
  • Nouc mam (Vietnamese fish sauce)
  • Crushed peanut
  • Fresh chilli (sliced)

Method

  1. Heat wok (high heat).
  2. Add oil (I use coconut oil).
  3. Add lemongrass and garlic and stir fry very quickly.
  4. Then add sliced beef and continue to stir fry
  5. Add soy sauce and fish sauce (I free pour and adjust to taste)
  6. Add brown sugar (about a teaspoon but adjust to taste)
  7. You want to get the right mix of salty and sweet with the beef.
  8. Keep stir frying until beef is just cooked.
  9. Throw in the sliced onion and mix through but you don’t want them over cooked and soggy.

To Serve

  1. In Separate bowls, place noodles.
  2. Add beef on top.
  3. Surround the beef with some lettuce, spring onion, pickled carrot and Vietnamese herbs.
  4. Top with crushed peanut and fresh chilli.
  5. Add nuoc mam to you tasting as dressing and serve.
