Tracy plates up a starter with the little known betel leaf - a fresh south east asian starter with plenty of zing!
RECIPE
Coconut prawn on betel leaf
Ingredients
- Garlic (finely chopped)
- Chilli (finely chopped)
- Ginger (finely chopped)
- Galangal (finely chopped)
- Half kilo prawns (coarsely chopped)
- Fish sauce
- Coconut cream
- Coriander
- Betel leaf
- Lime
Method
- Heat wok (high heat) coconut oil
- Add garlic, chilli, ginger and galangal stir fry quickly.
- Then add prawns and story fry for a couple of minutes.
- Add fish sauce and a little coconut cream.
- Mix through.
- Once cooked through, take prawns off heat. Let it stand a for a few minutes.
- Stir through fresh coriander.
- To serve, top betel leaf with a spoonful of the mixture, top with crushed peanuts and squeeze lime over the top.
- Serve.
