Corned Beef Sandwiches with Homemade Mustard Sauce

Caroline reaches into the comforts of her childhood to pull out a family favourite - corned beef sandwiches.

RECIPE

Corned Beef Sandwiches with Homemade Mustard Sauce


Ingredients

  • 1.5kg corned silverside beef
  • 5 cloves garlic
  • 4 stalks celery roughly chopped
  • 3 carrots halved and roughly chopped
  • 1 onion quartered
  • Handful of thyme
  • 2 bay leaves
  • 1 can of ginger beer
  • 1 tablespoon stock powder
  • Slug of Worcestershire sauce
  • Slug of balsamic vinegar or red wine
  • Enough water to cover the meat.
  • 1 tablespoon mustard seeds


Mustard Sauce

  • 1 Tablespoon of mustard powder
  • 1 tablespoon of raw/brown sugar
  • 1 egg
  • 1/2 cup Apple Cider Vinegar


Method

Corned Beef

  1. Place all the ingredients in a pot, cover the meat with water and slowly simmer with a lid on for around 4 hours or until the meat is easy to stick a fork or butter knife into.

Mustard Sauce

  1. Mix mustard, egg, sugar and vinegar into a bowl until combined
  2. Take 1/2 a cup of stock from the corned beef and heat in a saucepan until it simmers on a low heat.
  3. Add Mustard mixture and continue to simmer while stirring until the mixture is thick enough to coat the spoon.

Assembly

  1. Slice cold corned beef into thick or thin slices, your preference, set aside.
  2. Slather mustard sauce down on the base of some thick white bread
  3. Add meat, then sliced tomato, sliced cheese and red onion (the onion gives it a great bite)
  4. In a pan, melt some butter and a bit of oil (can do this in a sandwich press also) sprinkle some grated cheese down and then place sandwich on top of the cheese.
  5. Press down and leave for a minute or so, monitor the temperature so you don’t burn it.
  6. Flip and repeat, add more butter or oil if necessary.
  7. Slice and enjoy!
