Caroline fills the winter air with a zest to keep the warmth alive - A citrus twist on the humble flan.


RECIPE

Orange, cardamom custard tart


Ingredients

  • 2 cups whipping cream
  • 1 cup milk
  • 3/4 cup sugar (1/2 cup in the custard, 1/4 cup sugar for caramel)
  • 3 eggs
  • 2 egg yolks
  • ½ cup orange juice
  • Rind of 1 orange

Method

  1. Set Oven to 170c
  2. Heat cream, milk, rind of 1 orange, sugar + bring to near boil.
  3. Whisk eggs with ½ sugar
  4. Pour milk onto eggs, strain and pour into bowls.
  5. Cook 30 min in water bath in the oven.
  6. Cool. Place a slice of skinned orange on top.
  7. Caramelise remaining sugar and when dark take off heat. Then stir through orange juice when cool pour on top of custard
  8. Serve!
