Caroline fills the winter air with a zest to keep the warmth alive - A citrus twist on the humble flan.
RECIPE
Orange, cardamom custard tart
Ingredients
- 2 cups whipping cream
- 1 cup milk
- 3/4 cup sugar (1/2 cup in the custard, 1/4 cup sugar for caramel)
- 3 eggs
- 2 egg yolks
- ½ cup orange juice
- Rind of 1 orange
Method
- Set Oven to 170c
- Heat cream, milk, rind of 1 orange, sugar + bring to near boil.
- Whisk eggs with ½ sugar
- Pour milk onto eggs, strain and pour into bowls.
- Cook 30 min in water bath in the oven.
- Cool. Place a slice of skinned orange on top.
- Caramelise remaining sugar and when dark take off heat. Then stir through orange juice when cool pour on top of custard
- Serve!
