Stuart turns last night's roast into a simple yet delicious breakfast.
Ingredients
- 2 eggs
- Left over roast vegetables
- Left over roast meat
- Butter
- ¼ onion
- 2 cloves of garlic sliced
Method
- Roughly chop up veggies and throw them in a bowl, then mash all the veggies up together.
- Finally chop up your roast meat and add it to the bowl giving it a good mix.
- Add butter then the onion and garlic to a pan on a high heat.
- Before the onions start to caramelise add the mixture of leftovers to the pan.
- Fold the mixture in the pan into itself from the outside and press it into the middle until all the vegetables are crispy.
- Flip the bubble and squeak fritter onto a plate and add 2 eggs poached and whatever other garnish you like!
