Ingredients

  • 2 pork scotch steaks
  • ¾ cup jasmine rice
  • 2 tbsp sticky rice
  • 3 tbsp fish sauce/brown sugar mix
  • 2 tsp soy sauce
  • 1 lime
  • 1 shallot
  • 1 small bunch coriander and mint
  • 1 red chilli
  • Red cabbage
  • 1 red apple
  • 1 carrot
  • Oil and salt

Method:

  • Toast the sticky rice in a dry pan over low heat for 3–5 minutes until golden. Cool, then crush into a powder.
  • Prepare the vegetables by finely slicing the shallot, carrot, apple and cabbage. Chop the chilli and herbs, and cut the lime into wedges.
  • Cook the jasmine rice in water until tender, then leave covered off the heat before fluffing with a fork.
  • Mix the fish sauce and brown sugar, soy sauce, shallot, chilli, lime juice, toasted rice powder and some herbs to make the dipping sauce.
  • Toss the cabbage, carrot and apple with some herbs and a little salt to make the slaw.
  • Coat the pork steaks with a little sauce, then grill in an oiled pan for 3–4 minutes per side, or until cooked through. Rest before slicing.
  • Serve the pork with jasmine rice and apple slaw, topped with the remaining sauce and fresh herbs. Enjoy!
